We didn’t make it out today. The afternoon brought clouds and the threat of rain, which isn’t so awesome for baby travelling. Instead we stayed in, and I cooked up some super yummy cabin gourmet dinner.

I may be in the middle of nowhere but I came well stocked and have made a trip to all three local grocery stores to find anything I couldn’t pack. Tonight was lemon pepper drumsticks with mushroom/broccoli/garlic quinoa and pea sprouts with a spoon of pesto.

And dessert just went into the oven. It’s my own special version of apple crisp. Just take your basic apple crisp (apples, flour, oats, brown sugar, butter, cinnamon) and then go crazy adding other tasties. This one also has organic dark chocolate chips, hemp seed, flax seed, and dried cranberries. I can eat the whole thing in one sitting, but I’m going to try and save some for breakfast.
